Harvest Loaf
1/2 cup 2 % milk
1 tps lemon juice
1 cup all purpose flour
1/2 cup sugar
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 cup canola oil
2 eggs
1 small apple grated (1/2 cup)
1 carrot grated (1/2 cup)
1 small zucchini grated (1/2 cup)
1/4 cup walnuts chopped
Directions:
- Preheat oven to 350f
- Prepare a loaf pan with cooking spray (or butter)
- In a small bowl combine milk, and lemon juice, set aside.
- In a large bowl combine flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- Add oil, and eggs to milk mixture, whisk until combined.
- Pour wet ingredients into dry.
- Fold in apple, carrot, zucchini, and walnuts.
- Pour into prepared loaf pan. Bake for 40-45 mins, or until a toothpick poked in comes out clean.
- If desired make a quick glaze mixing 1/2 cup icing sugar, 1 tbsp honey, a touch of milk, and pour over cooled loaf.
